Simple Taco Soup


Taco Soup (makes enough for about 4 servings)
  • 1 can of diced tomatoes (can also just dice up 2 tomatoes)
  • 1 can of whole kernel corn
  • 1 can of black beans
  • 1 small can of green chiles (I didn't use these in mine)
  • 1 package of taco seasoning
  • 1/2 lb-1 lb of ground beef
  • desired amount of graded cheese of choice for topping
  • corn chips, optional (I used fritos)
  • sour cream, optional

Directions

  • Brown the ground beef in a skillet. Drain the grease (if there is any).
  • Add 1/3 to half the pack of taco seasoning. Add a little water for moisture if it's not stirring in well.
  • Put all canned ingredients (juices and all) in a large pot and begin to heat. Stir together and add the rest of the taco packet.
  • When the soup is hot, add the ground beef and allow to heat for a little longer.
  • We put some corn chips in a bowl and poured the soup over the chips. Then we put the cheese and sour cream on top.
SO simple to make and so good!

  1. This recipe was so good and so easy to make. Both of my little guys ate it-and they never like to try anything new!
