Peanut Buttercup Brownies

1 box brownie mix
1/2 cup peanut butter chips
1/2 cup semi-sweet chocolate chips
1/2 cup creamy peanut butter

Preheat over to 350
Spray mini muffin pan
Prepare brownie mix as directed
Spoon batter evenly into muffin pan (no cups necessary)
Bake 13-15 minutes or until top is set up
After brownies are out of the oven wait fir the middle to sink in a little bit or push in with a spoon for the peanut butter
Place peanut butter in a bowl and microwave for 30 sec
Spoon 1/2 tsp into the center of each brownie
Top with chocolate chips & peanut butter chips
Cool in pan

Makes 36 brownies

No Bake Cookies


1/2 cup butter (2 sticks)

1 cup sugar

1/4 cup milk

2 tbsp coco


Combine in sauce pan

Heat on medium

Boil 1 minute


Remove from heat


Add:

1 1/2 cups of peanut butter

1 1/2 tsp vanilla

3 cups oatmeal


Stir together until combined completely


Place 1 inch drops on wax paper till cookies harden

Best-Ever Chocolate Chip Cookies


1 1/2 cups sifted all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
1 cup (2 sticks) butter, softened
1/2 cup firmly packed light brown sugar
1 cup granulated sugar
1 large egg
1 tsp vanilla extract
1 1/2 cups old-fashioned rolled oats
1 cup semi-sweet chocolate chips

Mix together flour, baking soda, and cinnamon
Beat together butter, brown sugar, & granulated sugar at medium speed until light and fluffy
Beat in egg & vanilla
At low speed beat in four mixture until blended
Fold in oats and chocolate chips
Cover with plastic wrap
Chill for 1 hour

Preheat oven 350
Grease 2 baking sheets
Shape dough into 1 inch balls
Place cookies 2 inches apart flattening them slightly
Bake cookies till lightly brown around the edges
10-12 minutes

Chocolate Almond Delight Cookies


1/2 cup oats
2 1/4 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 cup unsalted butter (room temp)
1 cup (packed) brown sugar
2 large eggs (room temp)
3/4 tsp pure almond extract
1 (12 oz) bag of semi-sweet chocolate chips
1 cup whole almonds toasted & chopped

Preheat oven to 325

Mix dry ingredient in a large bowl
Mix butter & sugar until fluffy
Beat eggs & almond extract
Add in flour mixture in 3 parts until blended
Cook 13 minutes
Let cool for 5 minutes before removing from pan

Variations: you can add in 1/2 cup coconut only 1/2 cup almonds & make it taste just like an Almond Joy candy bar

Pumpkin Chocolate Chip Bread


1/2 cup butter or margarine softened
1 cup sugar
2 eggs
1 1/4 cup canned pumpkin
2 cups flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp allspice
1/4 tsp cloves
1/4 tsp ginger
1/2 cup chocolate chips
1/2 cup walnuts

Preheat oven 350
In a large bowl, cream butter, sugar, eggs & pumpkin. In a separate bowl combine dry ingredients Stir into creamed mixture Blend well Stir in 1/4 cup chocolate chips and 1/4 cup walnuts Pour into greased loaf pan Top with remaining chocolate chips and walnuts
Bake 45-50 minutes

Fudge


2 tbsp butter
3/4 cup evaporated milk
2 cups of sugar

Boil for 5 minutes

Remove from heat and add:
1 12 oz bag of semi-sweet chocolate chips
1 7 oz jar marshmallow creme

Stir will & add:
1/8 tsp salt
1 tsp vanilla
1 cup nuts (optional)

Pour into 9x9 pan
Cool & Cut
